We grew up helping make (and mostly stealing samples of) my Dad’s delicious beef jerky. Sometimes he would let us pick flowers from the backyard and put them in our dehydrator and other times he would turn an eye while we snuck into it to steal a piece of warm, delicious jerky that had yet to pass the dryness test. He compiled all of his favorite recipes into a homemade cookbook, stapled it together at the seam and called it The Great American Beef Jerky Cookbook.
All grown up and seventeen years after our Dad created his cookbook, we decided to test out a recipe. We used our oven and made “Good Old Fashion” jerky with a cut of round steak. It was every bit as delicious as we remembered. We shared a few pieces with friends and they loved it also. We started making and sharing a lot of jerky and decided the best way to share was to update the cookbook and publish the recipes. And so, to honor our Dad’s cardinal rule of jerky makin’: “save some for others”, we’ve publish this book of recipes to share with you, in hopes that you will “enjoy one of the finer things in life – homemade beef jerky”.
